Third loaf of 3 seed whole wheat. First was using the recipe...1/2 whole wheat to bread flour and that came out too light...the loaf was huge for 1.5 pounds. Second try was 1/1 and it came out as big and too light. Third try (this one) was 2/1 and that did it...much smaller...a bit denser and IMO a much better loaf! I need to try the same thing with rye maybe starting at 1/1 rye to bread flour.
Oh that looks so good!! I don't have a bread machine so my bread making is saved for the "cooler" months aka as maybe January and February if I am lucky! I should invest in a machine though because you have inspired me.
ReplyDeleteThe machine is simple + easy + no mess although I have to admit that there was a learning curve for me but I had no previous baking experience AND I was dealing with high altitude baking. This one came out good...I added a bit more seeds and I think that helped too...3 tablespoons each of fennel, sesame and caraway seeds.
